Winemaker’s Note:
Natural ancestral-method sparkling rosé made from 100% Monastrell. Fermented spontaneously with native vineyard yeasts, without added sulfites. Clarified by hand and disgorged manually on demand. Crafted with minimal intervention to preserve freshness and varietal expression. Limited production of 1,030 bottles.
Description of wine:
Fresh and seductive sparkling rosé with fine, well-integred bubbles and a bright Mediterranean character.
Tasting profile:
Crunchy red fruits (cherries and wild strawberries) with floral undertones; fresh, elegant palate and delicate mousse.
Pairing:
Light starters, casual bites, white meats, and pasta with all kinds of sauces.
Serve at: 4–6°C (fresh but not ice cold)
